The Kyushi Wellness ‘Bread’ Recipe

This is one of our most made recipes, the perfect ‘bread’ for toasting, enjoy with butter, avocado, mushrooms, egg or perhaps with some almond butter & jam! We choose to buy whole flaxseeds and grind them ourselves, this is because the oils are delicate and go rancid quite quickly, but you can of course sub for pre ground flaxseeds but keep this in mind.

Often when we cant tolerate wheat or gluten this can mean bread is difficult to digest. We wanted to provide clients working with Peter Dugmore with an option to replace the much loved bread. This bread isn’t going to make you a great sandwich unless youre making an open sandwich but it toasts like a dream, and you can freeze it!

Ingredients

  • 1 cup almond flour

  • 3/4 cup arrowroot flour

  • 1/2 cup flax seed/linseed grind into a powder in your food processor/nutribullet. Pre Milled can often go rancid very quickly - this way you know its super fresh.

  • 1/3 cup coconut oil Solid- not melted

  • 4 medium eggs

  • 1/4 cup water room temp

  • 2 tablespoons Olive Oil

  • 1 teaspoon apple cider vinegar

  • 1/2 teaspoon sea salt

  • 2 teaspoons baking powder (aluminium free)


Optional extras/flavour ideas:

2 tsp turmeric & 1/4 tsp black pepper.

Chopped Seeds & Nuts

Mixed herbs

Olive & Walnut pieces


Directions

  • Preheat oven to 180C.

  • Line a standard bread tin with parchment paper I like to add a little overhang on the sides to I can lift the loaf out to cool after cooking.

  • In a blender or food processor, grind the Flax or linseed into a powder.

  • then combine all of the ingredients in the food processor or bowl.

  • Pour the batter into the lined loaf pan.

  • Bake for 35/40 minutes until golden on top.

  • Remove from the tin and allow to cool on a rack.

Best served toasted. Enjoy!

Store in a cool place. Slice and freeze on the day you make it.
